Having worked in both kokuto shochu and imo shochu distilleries, John offers guests a rare behind-the-scenes perspective on the craft, history, and traditions behind this remarkable spirit.

Embodying the essence of the Amami Archipelago, kokuto shochu is produced at around two dozen distilleries across five islands. Aged in earthen pots, tanks, and barrels, each distillery produces a spirit with its own distinctive character.
